Easy Holiday Meal Ideas

Easy Holiday Meal Ideas

With the holidays approaching, it can be hard to be the only Vegan in a family setting. Whether it isn’t having many options, or the constant remarks from family, the holidays can be a “tough” time for Vegans alike.  I wanted to come up with a few meals for you guys to either bring for a large group of people, or just for yourself. This Christmas, my family friends asked me to bring a dish or two. Besides bringing dishes for a large group of people, I am also going to bring my own personal meals. It is always easier… View Post

Maple Sriracha Tofu

Maple Sriracha Tofu

If you couldn’t tell from my Instagram, I absolutely love Tofu. Scrambles, baked, sautéed. I could go on and on.  I decided to do another baked tofu recipe, since you guys seem to love my sesame soy baked tofu recipe from awhile back.  I decided to cut my tofu into these fun squares instead of my normal cubes and it’s so fun! You could totally do normal cubes but I just wanted to try something different and I’m glad I did. What I love about this tofu is the contrast between sweet and spicy. Creamy Sun Dried Tomato & Kale Pasta

Creamy Sun Dried Tomato & Kale Pasta

Ever since my last sun dried tomato recipe, I have been dying to do another variation of it. I created a creamy and delicious sun dried tomato sauce that is completely nut free. As I am allergic to all nuts, I know for a fact it can be a bit harder to find creamy pasta sauces that are cashew free.  This pasta sauce resembles flavor of a Vodka sauce without the Vodka and heavy cream. It has that beautiful pink tint to it and packs a ton of flavor. As some of you may know, pasta is my favorite carb.… View Post

Tofu Chicken Noodle Soup

Tofu Chicken Noodle Soup

There is nothing better on a cold day than to cozy up with an nice bowl of soup. Prior to going Vegan, chicken noodle soup was a favorite of mine. I basically grew up on it since my grandmother made it every time I would go to her house.  When it hit me that tofu could potentially be a great chicken substitute, I knew that I needed to do this recipe. This is the only soup that I will eat chunky and is so warm and cozy.  I am not huge on soups, but this is definitely the exception. It… View Post

Stuffed Holiday Seitan

Stuffed Holiday Seitan

It is incredibly easy for us to head to the grocery store the day before Thanksgiving and picking up either a Tofurky roast or one of Gardein’s holiday products. I completely get it. However, why not try to make your own? Not only is it healthier, but it will taste just as good (even better).  Seitan is mainly made out of vital wheat gluten, which is the main protein of wheat. It is a great soy substitute and is incredibly easy to make. It may seem intimidating, but I was shocked myself with how easy it was.  Instead of making… View Post
