Orange Glazed Tofu

Orange Glazed Tofu

I have recently been starting to use corn starch a lot in my cooking, because I love the way it can thicken up a sauce and add such a luxurious feeling to so many dishes.  Tofu is a HUGE staple in my life, and I always have 1-2 blocks of it in my fridge. Previous to going Vegan, I literally could not understand Tofu. It creeped me out. I would laugh at the thought of eating Tofu. Funny how things change.  I use Tofu for so many dishes because it is SO versatile. Like for instance, did you know tofu… View Post

Vegan Stuffed Shells

Vegan Stuffed Shells

Ever since I was a kid, Italian food has always been my favorite. The pasta, pizza, bruschetta…Everything is so tasty. Before going Vegan, I was a ricotta obsessed. I loved it on almost everything and always had it in the house. After going Vegan I realized that Tofu makes an amazing Ricotta replacement! When crumbled like you would when scrambling Tofu, it makes such an amazing consistency. Paired with the right seasonings & other items, you wouldn’t know the difference. So I decided to recreate one of my favorite Italian recipes: Stuffed Shells. After trying this for the first time,… View Post

Easy Tofu Lettuce Cups

Easy Tofu Lettuce Cups

Hello everyone! I am back with another recipe for you guys. Something that I absolutely love are lettuce cups. Iceberg lettuce is crunchy, flavorful, and perfect for little cups to add an array of toppings to. So I decided to make one that was nut allergy friendly but still had amazing flavor. Usually lettuce ups don’t come with rice , but I like them for added carbohydrates and to make them more filling. Makes… View Post

Carrot Hot Dogs

Carrot Hot Dogs

The infamous carrot hot dogs. Some people like them, some people hate them. I was skeptical in trying them but I did it on a whim and I LOVE THEM. It really comes down to how you cook the carrots and making sure they’re well done enough to not be crunchy, and completely lose the carrot taste. I also decided to make a couple variations of them. I made them plain, breakfast inspired, and philly cheese steak. It’s fun to have different variety and flavors to show how this is completely versatile and how you really don’t need to eat… View Post

Avocado Pasta Salad

Avocado Pasta Salad

With Summer upon us, we all start to crave more refreshing and satisfying meals. I personally find that I consume way more fruit in the warmer months compared to when it’s cold out. I also like meals that feel lighter, but are still delicious. You probably wouldn’t think of “Pasta Salad” being a light dish but by having a creamy avocado dressing instead of a mayo based one, it completely transforms the dish and screams summer time.  Also by adding toppings that are currently in season, it makes the dish feel even more fresh and perfect for this summer weather.… View Post
