Welcome back to What I Ate for your Veganuary!  It’s gotten cold again in NY and I have been craving more comfort meals Breakfast:  Didn’t take a photo, but avocado toast as always!  Snack: For lunch I made a soup today, and only needed a little carrot. I am combining this two days and skipping the 12th because I had a bad day on the 12th and didn’t photograph anything I ate!  13th: Breakfast: For breakfast I made grain free pancakes using the Otto’s Cassava Flour.  Recipe:  1/2 cup cassava flour 1/2 tsp baking powder sprinkle of salt Flax egg (1 tablespoon ground flax & 3 tablespoons water)  1/2 cup plant milk 1/2 tablespoon maple syrup  tsp oil  I first made the flax egg and let that sit until it was gelatinized and combined all the ingredients and made the pancakes! Welcome back to January 10th of What I Ate!  I really liked my ideas of doing collages from my last post to show more of the process of cooking, so I am carrying that on to today!  Breakfast:  For breakfast this morning, I had avocado toast on Ezekiel bread with tomato & chickpeas! Welcome back to January 9th of What I Ate!  Breakfast:  For breakfast I made the PB Oats from my friend Ilene’s new cookbook The Colorful Kitchen.  Instead of PB, I used Sunbutter!  Morning Beverage:  To drink I had the Sencha green tea by Pique.
