I love Pesto and I love Sun Dried Tomatoes…So why not combine the two? Combined, they’re an amazing combination and I knew I had to share this recipe with you guys!
I love making the sauce a bit chunky and have pieces of the sun dried tomato that haven’t been fully blended up because it adds a great form of texture and taste.

- *Serves 2-3*
- 1 Medium Avocado
- 1/2 Cup Chopped Sun Dried Tomatoes (Oil packed or regular is fine. If you used Oil packed drain all oil)
- 1/2 Cup Basil leaves
- 1/4 Cup Nutritional Yeast
- 1 Tablespoon Lemon Juice
- 1/4 Tsp Salt
- 1/4 Tsp Pepper
- 1 Tsp Crushed Garlic
- Add all ingredients except sun dried tomatoes into food processor and blend until smooth.
- Add in sun dried tomatoes and pulse until combined. I like to make mine a little chunky with sun dried tomatoes but pulse until desired consistency.
